Turkey Meatloaf Muffins


1 pound ground turkey                               
2 egg whites
1/2 cup quick cooking oats                         
1/4 teaspoon cumin
1/4 teaspoon thyme                                   
1 teaspoon dry mustard
1 teaspoon fresh ground black pepper          
1 teaspoon chipotle pepper sauce
1/2 teaspoon salt                                       
1 tablespoon minced garlic
1/2 small onion, diced                                
1 stalk celery, chopped


Preheat oven to 375 degrees. Spray muffin pan with olive oil. Mix all ingredients in a large bowl. Roll mixture into large meatballs and place in muffin pan. Bake for 40 minutes.

Serving size is 2 muffins.
