Vegetable Salad

1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
1 red bell pepper, chopped
1 cucumber, chopped
1 small red onion, chopped
1 clove garlic, chopped
1 tablespoon capers
3 tablespoons olive oil
6 tablespoons Champagne vinegar
3 tablespoons Dijon mustard
Pinch of salt and pepper

1. Combine vinegar, oil, mustard and salt and pepper in bowl and wisk.
2. Combine all ingredients and let stand over night.
