Turkey and Black Bean Chili

Serves 6
Ready in 25 minutes

1 tablespoon olive oil
½ medium yellow onion, diced
1 teaspoon minced garlic
1 pound ground turkey
1 tablespoon chili powder
15 ounces diced tomatoes with green chili peppers
6 ounces tomato paste
9-10 ounces canned corn, drained
15 ounces canned black beans, drained and rinsed
Dash of hot pepper to taste

In a stockpot, heat oil over medium heat and add onion. Cook until tender, about 3 minutes. Add garlic and stir for 30 seconds, then add the turkey and chili powder. Brown the turkey for about 5 minutes. Add the diced tomatoes, tomato paste, corn and beans, and bring to a simmer. Cook for 10-15 minutes, stirring occasionally. Serve with grated cheese and sour cream.
