Toad in the Hole Recipe

Valentine’s Day falls within American Heart Month and this perfect-for-two whole grain breakfast idea will show your valentine just how much you care. Consuming whole grains is not only linked to reducing the risk of heart disease, but also improving the risk factors associated with it, like weight and blood pressure. So do your heart, and your sweetheart, a favor this Valentine’s Day, with this ‘Toad in the Hole’ recipe. Enjoy!
Ingredients:
2 tablespoons of butter
4 slices of firm whole wheat bread
4 eggs
2 tablespoons chopped parsley
Salt and freshly ground black pepper to taste
Instructions:
Melt 1 table-spoon of butter in the skillet over medium high heat. Cut holes or hearts in the center of bread slices. Add 2 of the bread slices and their circles (or hearts!) and fry until golden brown. Flip with a spatula and add one egg to each hole and cook to desired doneness. Repeat with the remaining two slices of bread and eggs.
Remove the egg toast to a plate and garnish with chopped parsley, salt and fresh pepper. Top with the toasted circles and serve at once.
