Mother’s Day Pizza

Quick & Easy Pizza

Servings: 2, or just increase the slices and recipe to serve as many as necessary
Time: About 20 minutes
Ingredients:
1 6-inch pita bread
1 T olive oil
3 T tomato sauce (your favorite kind or see scratch recipe)
¼ cup shredded cheese

Cut pita bread lengthwise in half. Brush olive oil on both sides of the pita. Spread pizza sauce on the inside of the pita, then spread shredded cheese over the pizza and bake in the oven at 350 degrees until the cheese completely melts — about 5 to 10 minutes.

Also, you can add other favorite pizza ingredients, such as green peppers, pepperoni, basil, or diced tomato.
Tip: Put the pizza on a tin foil so, if the cheese melts, it will not mess up Mom’s oven. Or, with Dad’s help, the pizza can be cooked on the grill.

Fresh Tomato Sauce
Makes 1 quart
Preparation time: 30 minutes

Ingredients:
2 oz butter
8 oz onions, diced
4 oz celery, diced
2 oz carrots, diced
2 cloves minced garlic
48 oz tomatoes, peeled and chopped
4 oz tomato paste
1 tsp salt (to taste)
1/8 tsp white pepper (to taste)
1T basil, chopped
1T parsley, chopped

Assemble all ingredients and equipment needed to prepare the recipe. Sweat (sauté) the onions, celery, carrots and garlic in the butter until the onions are translucent. Add chopped tomato and simmer for about 30 minutes until the desired consistency is reached. Adjust seasoning to taste with salt and white pepper, stir in the basil and parsley. Serve as needed, or make it for Mom to freeze for use later.
