LILY BAKES: Shortbread Christmas Cookies

Lily Barnes is our 10-year-old resident kid baker. Each month she shares an original recipe that kids can make at home with their parents, plus a few behind-the-scenes tips and tricks to make your treat extra special. Here is Lily’s recipe for Shortbread Christmas Cookies:
SHORTBREAD CHRISTMAS COOKIES
I love to have Christmas cookies during the winter! I think other kids will like making these cookies because it is easy to make, and fun to decorate. After adding the icing, you can use different sprinkles and candies as toppings. I had a great time making these cookies with a Christmas time theme.-Lily
Serving size 8-10
INGREDIENTS
Cookie:
- 6 oz of unsalted butter
- 1/3 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 1½ cup of bread flour
- ½ teaspoon of kosher salt
Icing:
- 3 cups powdered sugar
- 2 teaspoons light corn syrup
- 5 tablespoons room temperature water
- pinch of salt
DIRECTIONS
Cookies:
- Preheat oven to 350°F
- Mix butter and vanilla extract until creamy
- Add powdered sugar and salt; mix
- Scrape bowl down and add flour while mixing. Scrape bowl again and mix until combined
- Shape the dough in a cylinder and wrap in plastic and chill until firm. 45 mins
- Use a knife to cut ½ inch thick pieces (with a parents help)
- Place cookies on a baking sheet lined with a silpat or parchment paper spaced out at least an inch apart
- Bake for about 10 minutes, rotating baking sheet in the oven halfway through
- Transfer to a parchment to cool
- Add Icing, sprinkles and candy of your choice to decorate
