LILY BAKES: Blueberry Biscuits

Lily Barnes is our 10-year-old resident kid baker. Each month she shares an original recipe that kids can make at home with their parents, plus a few behind-the-scenes tips and tricks to make your treat extra special. Here is Lily’s recipe for Blueberry Biscuits:
BLUEBERRY BISCUITS
I wanted to make this to try something different than my cake and cookie desserts. I like biscuits and I think kids will like to add their favorite fruit baked inside and add jam, butter, or honey on top for an extra yummy taste.—Lily
INGREDIENTS:
- 2¼ cups all-purpose flour
- 3 teaspoons baking powder
- 3 teaspoons sugar
- 2 teaspoons salt
- About 6 tablespoons butter, cold and cubed
- 1¼ cup whole plain yogurt
- 1 pint fresh blueberries
- 1 egg
- ½ tablespoon Sugar in the Raw
DIRECTIONS
- Preheat oven to 400 degrees
- In a large mixing bowl, combine all dry ingredients. Mix well
- Add diced butter to flour mix, using fingers, combine the flour with butter until a crumbly appearance
- Next add in yogurt, fold and combine until blended
- Gently fold in blueberries
- Turn dough out onto a floured surface and gently press the dough out into a round shape about an inch thick
- Using a round cookie cutter, press out 8 biscuits and arrange them a greased cookie sheet with biscuits touching
- Whisk 1 egg and lightly brush on top of biscuits. Sprinkle with Sugar in the Raw
- Bake at 400 degrees for 15 to 18 minutes
