Grilled Corn on the Cob
While this is a great summer side dish, it can really be made on any day of the year. Corn is loaded with nutrients and is extremely high in fiber, making it a filling food that’s naturally low in fat and calories. This dish calls for a few simple ingredients and flavor enhancers, like garlic, which helps to lower blood pressure and increase blood flow, to take it above and beyond the normal flavor expectations. By cooking the corn in its husk, you get a great corn flavor that’s sealed into the vegetable. Best of all, this dish takes little time prepare.
8 ears of corn
2 tablespoons of olive oil
2 teapoons crushed garlic
½ cup chopped cilantro
Soak husks in water for five minutes. In pan, sauté garlic and olive oil. Place corn on grill turning every 1-1 ½ minutes. Remove from grill.
Remove husks and brush olive oil and sautéed garlic on corn, squeeze fresh lime over top, and sprinkle with a dash of salt then place on grill.
Remove from grill and squeeze lime juice over top and sprinkle with cilantro.
