Almond Cookies


Makes 24 cookies.

1 1/2 cups raw almonds, divided

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1 large egg

1/2 teaspon almond extract

Preheat oven to 350 degrees. Place 1 cup of almonds in a food processor and ground for 30 seconds.* Place the ground almonds, flour, baking powder and salt in a bowl and combine. Place the butter and sugar in a standing mixer or bowl using a hand mixer and cream for 3-4 minutes. Add the egg and almond extract and mix another minute. Slowly add the flour mixture to the butter mixture until combined. Using a cookie scooper, scoop out the dough and place on a silpat or parchment lined baking sheet. Place one almond in the middle of each cookie. Bake for 10-12 minutes. Cool and serve.

* You can substitute almond flour if you prefer
